This shrimp scampi recipe is not only tasty but incredibly easy to make! A quick recipe made with shrimp, butter, basil, oregano, lemon pepper, & stewed tomatoes. I didn't use White Wine in this recipe but I explain where you can add it in easily.
What Do You Need?
- 1 pound of frozen shrimp (in the video I'm using 2lbs of shrimp)
- One 15oz can of pre-seasoned basil Stewed Tomatoes
- 2 Tablespoons Basil
- 2 Tablespoons Oregano
- 2 Tablespoons Lemon Pepper
- 2 Tablespoons of sugar
- 2-4 Tablespoons of Butter or Margarine
**Extra
- You can eat the Shrimp Scampi over pasta. You can choose any pasta you like, I am using a bow tie pasta in this video, but Angel Hair pasta is most popular.

Shrimp:
- Thaw your frozen shrimp in a bowl of COLD water. Using warm water will begin cooking your shrimp and you will have rubbery shrimp scampi...yuck! Thaw for 15 minutes.
- Once the shrimp has thawed decide whether you want to take the shell off or cook it with the shell on (in this video I remove the shell because it's cleaner with my children, lol)
- Melt 2 tbsps of butter in your skillet. I don't use White Wine in my video but this is where you can add the white wine.
- Once the butter has melted add your shrimp. Season your shrimp with basil, oregano, and lemon pepper (you can add lemon juice too)
- Cook shrimp until pink. This doesn't take long, so be careful not to overcook your shrimp.
- At this point your Shrimp Scampi is done. You can eat it like this or continue to with the tomato sauce.
Sauce:
- Melt 2 tbsps of butter in your skillet
- Add in your can of stewed tomatoes
- Season your tomatoes with sugar, basil, oregano, & lemon pepper
- Cover and simmer for about 10 minutes. You are turning these tomatoes into a sauce so you may need to cut them a bit as they cook (as I do in the video).
Serve your Shrimp as is or add a little more substance to your meal and serve over pasta :-)
